Commencer la cuisson côté peau et faire cuire 3/4 du temps de ce côté. 1/4 côté chair, le temps d'enlever la peau et la mettre dans la poêle pour faire une chips bien croustillante, en contraste avec la chair délicate du poisson.
Attention à ne pas faire trop cuire.
C'est un poisson relativement courant par chez moi, je dois en faire une petite dizaine par an (c'est la bonne période en ce moment !).

J'ai un petit doute sur le côté gustatif du pané ...

Ça se prépare comment la mistelle ?
J’en n’ai jamais pris 😅

Pour le moment j'ai fait assez simple au four un peu d'huile d'olive du vin blanc une cuisson pas trop forte j'ai peut-être pas encore trouvé la recette qui aille parfaitement mais en tout cas le poisson a un beau potentiel la chair est blanche et très fine

sinus en vrac
gros courant d'ouest post mistralou
chasse profonde
une belle mostelle : 1.6 kg
bref je sors de l'eau après 30 minutes
Quel courage de chasser profond dans ces conditions : rouget le roi de la profondeur :master: :lol:
